New Bourbon Alert- Castle & Key’s Untold Story of Kentucky Whiskey

Castle & Key Distillery has released the fourth installment of its limited-edition series, The Untold Story of Kentucky Whiskey. Created in collaboration with the Kentucky Black Bourbon Guild (KBBG), this special release isn’t just about the bourbon—it’s about honoring the legacy of Black Americans in the whiskey world and promoting equity within the industry.
Only 204 bottles of Chapter 4 are available. It’s a true single barrel, bottled at cask strength (52% ABV), and made with a mashbill of 73% Hickory King Corn—an heirloom grain once widely used in whiskey production. The bourbon is rich with notes of baked brown sugar, snickerdoodle, fig jam, Assam tea, and toasted brown bread.
The release will be introduced at a special event during SoulFeast Week in Lexington, KY. A dinner at Coleman Crest Farm on June 19 will offer guests a farm tour, a multi-course meal by Chef Isaiah Screetch, live music, and the first opportunity to try and purchase the bourbon.
Each label in the series highlights a historical narrative. Chapter 4 tells the story of Dallas Peters (via Bourbon Lens), a Black man from Millville, KY, who contributed to the Old Taylor Distillery (now Castle & Key) during an era of exclusion and discrimination. Though denied official recognition, Peters played a crucial role and was later falsely accused of theft—a claim that was ultimately disproven. His story symbolizes the many untold contributions of Black individuals to bourbon history.
This release reflects Castle & Key’s ongoing efforts to recognize overlooked stories, preserve heirloom grains, and support the next generation of diverse distillers. All proceeds will fund scholarships aimed at building a more inclusive distilling community. The bottle’s elegant label and packaging were generously donated by Stranger & Stranger and Eurostampa.
